Simple Blue Cheese Dressing

This tasty, garlicky, versatile dip and dressing can be used for vegetable dipping, spreading on crackers, or thinned with some buttermilk for a creamy salad dressing.

Ingredients
  

  • 1/2 cup low fat mayonnaise (I use Best Foods)
  • 1/2 cup light sour cream (Daisy or Land 'O Lakes)
  • 1/4 cup crumbled blue (or feta) cheese add a couple extra tablespoons after blending if you like it chunkier
  • 1 tbsp rice vinegar or other flavored vinegar
  • 3 garlic cloves or more depending on how much you like garlic
  • 1/8 to 1/4 tsp white or black pepper

Equipment

  • Food processor or whisk
  • Small knife or garlic press

Method
 

  1. Measure all ingredients into a medium bowl or food processor
  2. Pulse until desired creaminess, or whisk by hand in bowl
  3. Add more crumbled cheese if desired
